Course Materials: Canvas makes it easy to keep a backup copy of the materials on your computer or external storage after uploading them to your course site. To download all files of a Canvas course, you can press Ctrl + A on your keyboard (Command + A for Mac) and then click the Download 
icon from the tool menu in the "Files" section.
Gradebook: You can also create a backup of your gradebook records by downloading them in CSV format [instruction].
Assignment Submissions: You can download all student submissions for an assignment in "Assignments" [instruction] or "Grades" [instruction].
